This kind of Banyuls Rimage has the particularity to be bottled a little bit aged, in opposition with a classic Rimage bottled very early.

Variety : Black grenache

Vinification : This cuvée is a late bottled Banyuls Rimage, so it was vinificated searching for grenache’s fruity flavors and freshness. The maceration after mutage brings aromas and complexity. The tannins extracted are softened by an ageing in big french oak barrels called ‘foudres’ that allow gaz-exchanges between the wine and the air but without oxidation that would change the flavors. The 15 months-ageing harmonize the body and make more complex the aromatic bouquet.

Origins of Banyuls

The côte Vermeille’s soil is made of schist rock with a thick soil layer. In this mediterranean climate, the vine has to develop some powerful roots to extract water and nutrients it needs. With only 5000 to 6000 stocks/hectare, the exposition to the sun and Tramontane, the vine produces healthy and concentrated fruits. The vineyard is organized by low dry-stone walls that draw terraces and gave the traditional architecture. Terraces and steep hills make impossible any mechanization and requires to work exclusively by hand.

Tasting & food pairing

The fruit-driven nose reminds its origins of Rimage with strawberry-compote aromas or blackcurrant. Very round thanks to the ageing, it’s long and easy to drink.

Enjoyed as an aperitif, it is very interesting married with goat and cheep fresh cheese. Of course, it goes very well with desserts based on nuts, almonds, honey, candied fruits or bitter orange. Thanks to the oaked ageing, you can store the bottle opened for a while. The aromas can change (from very fruity to more spicy) but remains pleasant. Obviously, you can store the bottle for long time before to open it…
